FYI ON CERTIFICATIONS    
Effective Sept. 1, 2010
CEC Chefs CEH's will change to 80 CEH for primary certification, renewal 40 CEH, and 2nd renewal 20 CEH thereafter and ACF will be eliminating two refresher courses.  Starting with the 2nd renewal the only eight hour refresher required will be in sanitation.            
 
What’s the difference between a Written Exam Proctor and Practical Exam Evaluator? 
Comira has trained written exam proctors on how to administer the written exams for test candidates for certification.  Each proctor has been issued a proctor identification number and password Comira specific to the test site/location and authorized user.  The written exam proctor signed an agreement that only allows that specified individual to deploy exams.  
An Approved Certification Evaluator has been trained by ACF to evaluate practical exam candidates testing for their certification.  
In some cases, the proctor and evaluator may be the same individual for test facilities like Fort Lee, Le Cordon Bleu College of Culinary Arts - Miami, Columbus State Community College, Scottsdale Culinary Institute, Pennsylvania Culinary Institute and Schenectady County Community College (just to name a few) where they provide both testing opportunities.
In an effort to further assist local chefs with achieving their certification these dual sites have had their facility approved by ACF to administer practical exams and have been approved and authorized by Comira to administer the written exams.

The Practical Exam Administration Guide has been updated and is now available on the ACF website.  The Practical Exam Administrator Guide is a "living reference, updated periodically with changes in practical exam policies, procedures, and forms.  This is an excellent reference tool for both Test Site Administrator and ACE Evaluator.
If you have not attended an ACE Refresher Course in 2010 there are two more opportunities:

December 7, 2010 at 3 pm ET - Presenter:  Shawn Hanlin CEC - Register
To maintain your ACE status, you must attend an ACE Refresher session annually (calendar year).  Ace Refresher sessions are offered at all four regional conferences, ACF National Convention and through post convention webinars.  If a refresher is not completed by the end of the year, your ACE status will be considered inactive until a refresher course is completed.  We invite you to submit question to Alina Cataldi Cooper, Certification Manager at (800) 624-9458, ext 150, email to:acooper@acfchefs.net, to be forwarded to the ACE Subcommittee for clarification.  These questions and/or feedback topics will be used in future correspondence or in the development of policy, programs, etc.
