MEETING MINUTES

The regular monthly meeting of the Dallas Chapter, TCA was held on May 4, 2010 at Milestone Culinary Arts Center.

Call to Order:  Director Sharon Van Meter called the meeting to order at 3:04 pm.  Information packets containing the minutes for the April 6, 2010 meeting, State Conference (July 16-17, 2010) and National Conference (August 2-5, 2010).  Minutes are available for review after the 15th of each month on the TCA website. 

Minutes:  Michele Brown-Corrections to April minutes: ACF Central Regional Conference was held in Indianapolis, not Las Vegas.  Minutes approved/amended, motion by Arlene Mead, seconded by Cecilia Henson.  The minutes were corrected and adopted unanimously by voice vote. 

Treasurer's Report:  Jack Rayome-Included Knowledge Bowl funding for El Centro.  Motion by Jack Rayome to accept report, seconded by Brenden Mesch.  Adopted by unanimous voice vote.

Director's Report:  Sharon Van Meter-Information on State TCA Convention in Beaumont, Texas, July 16-18 attached to agenda.  Cost of bus transportation approximately $71 pp round trip.  This will be great meeting especially for our student members.

Committee Reports:
Public Relations/Social: 
Rachel Frank-Pot Luck Picnic June 13, evite to be sent.
Certification/Competition/Education:  Kelly Cook-Certification test being conducted June 12 at Art Institute of Dallas.  Mark Schneider, State Certification Chair soon to visit and share information.
Student Junior Recipe Contest:  Structuring monthly recipe competition for juniors.  Top 3 earning chance for scholarship prize.
Membership:  Robert Gillentine-Wrap up - Chefs on Fire:  Robert Gillentine, chair-Thanks to all who participated especially Brenden Mesch, the 100 student volunteers and Stacy O'Neil for organizing them.  The judges-who ate their way through 32 plates of food.  Thank you to Jason Addams, Dallas Liaison and Chief Eddy Burns.  Next year we are looking for 50 teams!  This event was a fundraiser to benefit the Parkland Hospital Pediatric Burn Unit.  Winners:  1st Place, Team Ruggles/Barbour, 2nd Place, Team Morabito/Bellgante, and 3rd Place, Team Weiss/Leftridge.  Thanks to sponsors:  Casco Industries, Tyson, Columbia Packing, Hasty Bake, Lemmons Company, Sysco, Milestone Culinary Arts, Ben E. Keith, Apparatus, Knox Street Pub, Patterson Food Processors, Paciugo Gelato, ACV, Fresh Point, FD, and Kingsford.  There are Chefs on Fire logo aprons, jackets, caps and cookbooks available for purchase.  A poignant side note, during the event there was an explosion at Medical Cities loading dock area where 2 workers were airlifted to Parkland Burn Unit and 1 brought to the Medical Cities Emergency Room. 
Community Outreach:  Marty Cummins-Days of Taste-Monday, May 10, 2010 at the Dallas Farmers Market, 9 am - 1 pm in conjunction with AIWF.  Needed chefs to share good nutrition and good taste to Dallas City children.  Visit www.robinplotkin.com.  Hunger Busters golf outing was May 1st.  Please send Marty your community service hours for any service for a non profit, such as Hunger Busters, etc., to be considered for the Southwest Airlines Green Pass.  Minimum hours, 100. 

New Business:  Respectful moment of silence for the loss of Werner Vogeli and Clint Grant.

Adjournment:  Motion was made by Marty Cummins to adjourn meeting.  Seconded by Robert Gillentine.  The motion to adjourn was approved by voice vote.  The meeting was adjourned at 3:28 pm.  The next meeting will be Tuesday, June 2 at Milestone Culinary Arts Center, 2 pm junior meeting, 3 pm meeting.

Director's Report:  TCA Chapter Awards Voting.  ACF Central Regional Conference-Attended by Sharon Van Meter, Robert Gillentine and Andre Bedouret in Las Vegas.  Reported to have been a fantastic event with great seminars and networking opportunities.  Competition Seminar information includes extension on timeline for re-instatement to June 11, 2010.  Must take mandatory Nutrition, Sanitation and Management Courses and pay the $375 fee.  CEH for certification are 80 for initial certification and 20 for renewals.  Awards-El Centro College Knowledge Bowl Team-Silver Medal, Kelly Cook, CEC, AAC-Cutting Edge Award, Charles Duit, CEC, ACE, AAC, CDM, CFPP, State President-Presidential Medallion #18, Bernard Urban CEC, AAC, Ben E. Keith-Rene Roncari Senior Chef Humanitarian Award.  Ron Boyd, Sr. Sales Vice President for Ben E. Keith awarded the Texas Chefs Association's first ever "TCA Award of Distinction."

As member of National Marketing Committee of ACF, looking for suggestions to bring the Olympic Team to members and gain support.  Items discussed during meeting:  Starting Culinary Olympic Team blog, create and promote a sustainable fund, share educational process with ACF members, hold open practice at conferences among others suggested by TCA Dallas Chapter Members.  Please send suggestions to Chef Cook at kvcook5775@gmail.comStudent Junior Recipe Contest-Structuring monthly recipe competition for Juniors.  Top 3 earning chance for scholarship prize.

Junior Director's Report-Dawn Knowlton-Second Annual Bits and Bites at El Centro, April 18 from 4pm-7pm, tickets $40 in advance and $45 at the door.  Tables presented by alumni.  To fund renovation of kitchens built in 1976.  Opportunity for Junior Members, May 2, refurbished 1946 Mac Fire Truck Grill.  Juniors open to work the truck at Chefs on Fire with funds going to the Dallas TCA Jrs.!

Membership-Robert Gillentine-Chefs on Fire, Sunday, May 2, 2010, Robert Gillentine Chair.  To review:  Preparation May 1, all ingredients must be brought in for approval during prep time.  For each heat 5 plates are presented, 4 for judges, 1 for public.  Deadline for menu has been extended to April 9, 2010.  Chefs on Fire meeting to follow TCA general meeting today.  Contact Chef Gillentine at robert.gillentine@hcahealthcare.com.

New Business:  Vote taken and tallied from ACF/TCA Chapter Awards 2010 Nominees.  Chef of the Year-Robert Gillentine, Pastry Chef of the Year-Michele Brown, Educator of the Year-Brenden Mesch, Student Culinarian of the Year-Robert Clifford, Contributor of the Year-Marty Cummins, Purveyor of the Year-Lucian LaBarba, American Foodservice, Director's Service Award-Gay Prewitt.  Kelly Cook moved to destroy ballots after winners announced, passed by voice vote.  Wylie HS Chef DeShazo looking for chef's to help students prepare for National Pro Start Competition in Kansas City, May 1-3, 2010.  Please contact chef to sign up for April 13 or April 20, 2pm-5pm.  Steve.deshazo@wylieisd.net
