MEETING MINUTES

The regular monthly meeting of the Deep East Texas Chapter, TCA was held on March 14, 2011.

Attending: James Harp, and Patrick Martin

Guests:  Jackson York, Chris Smith, Nannette Fausett, Nelia Douglas, Helen Hutchison, Rhonda Modisette, Mary Jo Hutchison, Zoe Green, Genoveva Pasillas, Cindy Sosa, Carliss Bonner, Carl Pfaffenberg, Emisha Brown, Caroline Garmen, Andrea Howard, Lace Stubblefield, Samantha Mora, and Te'keya Jones.

Call to Order:  Meeting was called to order at 5:15 pm.

Minutes:  Motion was made by James Harp to accept minutes from last month's meeting, seconded by Patrick Martin.

Treasurer's Report:  Chapter's account is in good standing.

Director's Report:  James Harp welcomed guests and introduced the guest chefs.  Chef York explained the membership and involvement of the organization.  Chef york went into demonstration of Biscotti.  He passed out a recipe of the Biscotti he prepared and showed several ways that you can present this dish.  Chef York then passed the floor to Chef Smith who went into fruit carving demonstration.  Chef Smith demonstrated how to make a turtle out of an apple and a rose out of strawberries using green onion for a stem.  Floor was then passed to director where James Harp discussed the fundraiser for April 15th.  Point of contact Chay Runnels (SFASU) explained what would be involved with the dinner and how the SFA students organized and prepared the event.  James discussed the involvement that the TCA would take in this dinner.  Floor was then open for comments.  Chef York explained agenda for TCA and having certified chefs in office and explained how to go about getting into this field.  Giving examples of internship, on job training, and education.

Adjournment:  Motion made by James Harp to adjourn meeting.  Seconded by Patrick Martin.

Guests:  Helen Hutchison, Corliss Bonner, Mary Jo Hutchison, Colton Dickerson, Craig Smith, Carl Pfaffenberg, Doug James, Megan Harris, Marie Leonard, Carole Nett, Camille Bolinger, Kerry Whittset, and Sherry Pfaffenberg.

Call to Order:  Meeting was called to order at 5:04 pm

Minutes:  Motion was made by James Harp to accept minutes from last month's meeting, seconded by Patrick Martin.

Treasurer's Report:  Account is in process of transfer.

Director's Report:  James Harp welcomed member and guests for coming tonight.  He explained what we would be demonstrating tonight which is flambe.  James explains the safety and concerns of this style of cooking while Kerry makes a banana fosters.  James then made a strawberry Romanoff.  Each of these samples were passed around so that guests were able to taste each demonstration.  Floor was open to questions about the process.  James and Kerry answered questions as they came.  After demonstration information of how to become members and website of TCA were given to guess in order to promote membership.  Discussed topic of fundraiser to guests in order to let them hear where the chapter would like to go and how we are going to accomplish this goal.  Floor was then open to guests for suggestions of what they would like to see and or discuss in April's meeting.  Topics of interest, vegetarian meals, sauces, rub, location and identification of cuts of beef.  Guests were informed of topic and guest chef that will provide demonstration to chapter in March.
