MEETING MINUTES

The regular monthly meeting of the East Texas Chapter, TCA was held on August 4, 2010, held at the H.A.M.M. on Hwy 64, Tyler, Texas

Attending:  Mel Schlagel, Jackson York, Sue Hunter, Kathleen Kilpatrick, Harry Kancyr, Chris Smith, John Radar, Richard Shelton, and Christian Chavanne.

Guests:  Sam Kennedy, Clyde Hays, Carolynn Verver, Myste Snow, Abby Warnick, Craig Barlow, Lewis Sword, Keith Harlan, Marguerite Ozella Courtier, Kat Santos, Al Heinol, Brett Keckeisan, Lowell Ivey, Casey Shanower, Ben Cooper, Norman Foster, Billy Bonzal, and Lupe Garza.

Call to Order:  The meeting was called to order at 3:04 pm.

Minutes:  No minutes for July

Treasurer's Report:  Finances for chapter are financially sound.  There was a bit of an issue with the chapter account involving the CD fund, but Mel Schlagel has it worked out and everything is back in order. 

Director's Report:  Chef Jackson welcomed everyone to the meeting.  Chef gave a commendation to Chef Mel Schlagel for his efforts in conducting the monthly meeting last month in Chef Jackson York and Chef Chris Smith's absence as well as his efforts for making sure we stay on track with the chapter's account.  Thank you Chef Mel Schlagel you are a huge support to the chapter and are greatly appreciated.  Chef York talked about how much our chapter is growing and interest in the chapter is growing.  We have been pounding the pavement and hitting the bricks to find more support and raise awareness of the TCA in East Texas.  We currently spread over 5 counties and need to continue to spread the word and increase our membership.  Since our membership spreads over a vast area, we are constantly finding interest in new areas and as a result we are seeing new faces at our monthly meetings.  We welcome all to our monthly meetings and everyone who has interest is welcomed to come and learn more about our industry.  It is important to educate the public about culinary arts and the vast diversity in our industry.  From there chef inquired about hosting the meetings at some different venues and Chef John Rader has offered Willow Brook Country Club for our September meeting.  Since the Edom Arts Festival is in October, the October meeting will be at Edom Bakery and Grill.  Everyone that can is urged to come out and help with both.  Chef Mel will chair our fundraising efforts at the art festival as he has the past few years.  This is a good opportunity to raise money for our chapter, meet people and get the word out about the TCA.  This festival is a Who's Who of artists and brings in a very diverse crowd of people.  So please attend next month's meeting and we will go over the time, set up, and execution of the fundraiser  We welcome back some of the team from Fresh.  Myste Snow was asked to keep us up to date with the concept Fresh and how there moving along.  So far Fresh is set to open in Feb 2011.  Chef then acknowledged all the awards that were given at the state convention.  On top of our chapter awards our Chapter Director, Jackson York CEC won Chef of the Year for the State of Texas and the chapter couldn't be prouder of Chef for his accomplishment.  Chef then spoke of the importance of continuing your education and working towards certification.  We never stop learning.  Being a chef a true chef is a life long pursuit.  Yes our industry is vast and the possibilities are never ending but chef still urged that we keep the classics alive.  It is with classical cooking that we keep our roots alive and to many chefs have strayed to far from their roots.   It is 100% possible to stay true to your roots and move forward with new ideas but we have to and cannot lose the foundation of our art.  Remember where we come from as chefs.

Old Business:  Chef Jackson York CEC and Chef Kat are still working on getting together a junior chefs association.  Chef Jackson again urged the members to visit schools and talk with young culinarians.  Mentor them.  These young culinarians are the future of our industry.  We all started at the same spot and had chefs that guided us and helped us along the way and we need to do the same with our youth.  You can't take it with you, share it.

Adjournment:  Motion was made to adjourn by Harry Kancyr and seconded by Chris Smith at 4:15 pm.  The next meeting will be on September 1, 2010, at Willow Brook Country Club, hosted by John Radar.
