The regular monthly meeting of the Heart of Texas Chapter, TCA was held on Monday, January 10, 2011, at the TSTC Culinary Building, hosted by Len Pawelek.
Attending: Ben Hernandez, Len Pawelek CEC, Ron Diebold, Gayle VanSant, Stephen Burns, Faye Reed, David Dunham CC, Karen Mengelkamp, Jeremy Hickman, Kimberly Fehler and Aniceto Moreno, Jr.
Guests: Anthony Gamino, Anthony Gully and John Hall
Excused: Ferrell Davis, Jerry Opperman CEC, and Mark Schneider.
Call to Order: Director Len Pawelek called the meeting to order at 5:30 pm and welcomed all in attendance.
Minutes: Len Pawelek read last month's minutes. Ben Hernandez made motion to accept minutes as is, Ron Diebold seconded the motion. Membership: State Office is giving chapter "thumbs up" for increase in membership for the chapter. David Dunham inquired about the possibility of a military discount for memberships. Charity/Fund Raising: Chili Cook Off is in the works with a 50/50 split between TCA-Hot and the Culinary Club with earnings. This chili cook off will be a start to t\enter larger chili cook offs as the chapter absorbs the rules and regulations provided by John Hall. John Hall suggests that a "Pros vs. Students" approach be made to pick three winning chili's that will be presented in the cook off race. A date was set for the Spring Fundraiser Dinner on April 7, 2011, and suggested to members and guests to bring meanu ideas for a "Regional american Theme" (i.e. Northeast, Northwest, Southeast, Southwest) to the next meeting. Social: Len Pawelek wants to have as many people from the chapter as possible attend the state and national conventions in March and June respectively.
Public Relations: Jeremy Hickman requests and is granted assistance with menu planning for a Valentine's fundraiser dinner.
Old Business: Ben Hernandez inquired on how the March of Dimes packages will be executed and is directed to contact Amanda Hance for further information. March of Dimes estimated a $39,000 in charity collected at the Roosevelt Ballroom. New Business: Possibly getting involved with A.J. Moore High School mentoring students from culinary program and possibly looking about doing the same with a possible culinary program at Waco High School.
Adjournment: Director Len Pawelek adjourned the meeting at 6:45 pm. Next meeting is Monday, February 7, 2011 at McMullen Connally Faculty Center, Baylor University at 6 pm.
