The regular monthly meeting of the Houston Chapter, TCA was held on October 4, 2011 at 4 pm in the new Cafe at South Servery, Rice University.
Attending: Lester Binnick, Johnny Curet, James Mooney, Derrix Norman, Yvonne Sternes, Jay Warren, Kimberly Zandwyk, Michael Yates, Martin DeSantiago, Sarah Finster, Ben Fonbuena, Kyle Hardwick, George LeBlanc, Ahmed Mihabi, Verna Saenz, and Bertrand Goutelon.
Excused: Paul Sofka and Diane Larsen
Guests: George Darsey and Alan Mallett.
Call to Order: Lester Binnick CEC, ACE, called the meeting to order and welcomed everyone at the meeting.
Sergeant at Arms: Jay Warren
Minutes: Chef Les asked that the minutes for the previous meeting held on September 13, 2011 be approved. Motion to accept the minutes by Chef Bernard Urban, seconded by Chef George LeBlanc.
Treasurer's Report: Chapter is financially sound.
Membership Chair: New Members: Johnny Curet, Johnny Kalfayan, Verna Saenz, and Barron Jacobson. Membership total is 71.
Director's Report: Chef Les suggested that a director be selected to set up and run Junior Meetings of TCA locally with the intent of bringing in new members and to award a student with a scholarship.
Events/Allied: Chefs Ball tickets: Fusion Foods - 2 tickets, LeNotre - 8 tickets, Ace Mart - 4 tickets, Southern Ice Cream.
New Business: Job opening at Horseshoe Bend, Texas (outside of Austin 60 miles).

Guests: Southern Ice Cream presented their product line and samples of their ice cream and cookie products. Steve McKeller and Michelle Franklin. Smart Financial Credit Union, Mr. James Hall made a presentation explaining the Rule of 72 and giving financial advice.

Minutes: Chef Les read last month's minutes dated June 7, 2011 to the members. Motions to accept the minutes by Yvonne Sternes and seconded by Diane Larsen.
Treasurer's Report: Chapter is financially sound.
Director's Report: A new membership was announced by Chef Les, we welcomed the new members. Chef Les discussed the update "Chefs Ball 2011," upcoming February 11, 2012 at Bayou Club. The food tasting went well. Tickets are available $100 per person, now accepting reservations, 8 people per table, synchronized table service - 44 waitstaff, 16 volunteers to plate food. Seeking culinary students if possible they get CEH letter. There are 31 tables, we expect 250 people maximum for the event. For payment options call Chef Adam at 832-484-0334 chapter treasurer or send a check to Bayou Club of Houston, Attn: Lester Binnick CEC, 8550 Memorial Drive, Houston, TX 77024. Scheduled to honor 5 people at the event: Walter Kayser, Erik Worscheh, Otto Fehlmann, Bernard Urban and George LeBlanc. Scheduled to hold silent auction at the "Chefs Ball". We are looking for donations for auction to raise funds for good causes. Chef Ben is the chairperson assisted by George LeBlanc charity chair. Chef Les received a discount for the waitstaff's server and Bayou Club Manager Jonathan Shear, CCM donated tent. We will have a raffle and entertainment surprise! Chef Les mentioned about the AAC Dinner for the ACF Youth Culinary Team Olympic to be held at Houston Country Club on October 21, 2011, http://texaschefsassociation.org/news.html support the Culinary Youth Team Olympic 2012.
Membership Chair: Chef Yvonne submitted the listing of vendors for the Chefs Ball event. Chef Les announced new members. Chef Ben mentioned about ACF corporate membership that saves money for employers. The more members the more cost savings for employers.
Certification Chair: Kyle Hardwick CEC,ACE informed members ACE Evaluator for new CEPC practical exam update certification. Chef Ben explained the update two requirements for initial certification pre-approval and 2nd form final application process procedures on being certify. It is an honor of prestige and integrity with the ACF certification program in the hospitality industry. Chef Kyle explained last September 4, 2011 two CEC candidates passed the practical exams. Chef Ben explained as TCA member's pursuing certification entitled to apply for certification reimbursement. Chef Ben is working on a project for TCA State subchapters actively ACF approved practical site on support reimbursement chapter expense proposal letter for the board memebers. Chef Ben discused about mentorship program, two culinary students have asked for chef's mentor. Recent ACF National Conference in Dallas, Texas AAC challenge chefs to have some people to mentor as ACF goals.
Apprenticeship Chair: Chef Ben encouraged members learn more about the program to visit ACF, www.acfchefs.org.
Events/Allied Chair: George Darsey is scheduled to get participation from schools and students.
AAC/Culinary Competition Chair: Bernard Urban CEC,AAC excused. Ben E. Keith Food Show Culinary Competition, ACF approved sanctions scheduled on January 18, 2011., Lone Star Convention Center, Conroe, Texas. Visit both website TCA State and Houston application form available.
Guest: Mr. Alain LeNotre introduced his school's new director. Matt Adams explained his business carving wooden spoon products to the chefs.
New Business: Glazier Food Show held on September 14, Wednesday. Great food show and excellent culinary competition chair by Lester Binnick CEC,ACE; "Congratulations to all the winners."
Adjournment: The next meeting scheduled is on October 4, 2011, at Rice University at 4 pm. Visit www.rice.edu click campus map. Meeting locations to be held at South Servery, 713-348-3839 ask for Chef Adam or Ahmed. Free parking will be at gate #9, University Blvd and Main St./Greenbriar Ave., "Rice Farmers Market." Open 3:30-7pm. Chefs and guest take a shuttle bus inner loop, get off at Baker Institute, south server is 3 minute walk south side campus. Meeting adjourned.
