MEETING MINUTES

The regular monthly meeting of the San Antonio Chapter, TCA was held on April 5, 2010 at Texas Meats and hosted by Burton Chase.

Attendance:  Rudy Garza, Mario Perez, Christina Perrington, Valerie Chew, Joseph Dominguez, Nick Cuellar and Burton Chase.

Guests:  Michael Clark, Buddy Jung, Culinary Students Norma Robledo and Casey Robledo.

Call to Order:  Meeting was called to order at 4:40 pm by Chapter Director Rudy Garza II.  Chef Joseph Dominguez was appointed Sergeant at Arms.

Director's Report:  Chef Garza welcomed all, thanked the membership at large for their undying contrition to the success of the chapter and their attendance.  In reference to the meeting minutes Rudy said he would forward all minutes to state ofice and asked to ensure that everyone's email address be up-to-date to ensure they are reached with any information he would be sending out to the membership.  In reference to the Assistant Director's report, Chef Jung announced that he was not paid up as a member and would only be observing and attending as a guest.

Old Business:  Chef Perez relayed the Treasurer's Report to the membership.  Chef Garza reported that the final fall-out would be conveyed in the form of a bank statement and additional monies would be deposited in the near future.  Chapter is verifying a convention pledge with State Office.  Chef Perez conveyed to the membership the current balance in the current account and the chapter is financially sound.  Chef Jung has not been able to connect at the bank to complete transfer of authorizations.  Expenses for Rudy Garza to Beaumont for Board Meeting in January would be deducted and deposits would be made once money transferred.  Chef Jung announced that once his property is finalized he would make good on his promise to rectify matters at the bank. Chef Garza shared his talk with state office and needs to gather additional information before proceeding with city-wide Chef's Competition.  Additional information needed: sanctioning of awards, TCA HQ is pushing for an ACF sanctioned competition, Rudy planning a trip to TCA office to meet cara to cara and procurement and space to hold competition.  Chef Perrington discussed that information is needed on average cost of an ACF competition, sponsorship information and the need for numbers and charge for judges.  Chef Perez raised questions on whether the rules applied to have a TCA/ACF sanctioned competition as the Taste of San Antonio.  Chef Garza called for nominations for Director, Chef of the Year, Student Culinarian of the Year, Contributor of the Year (which can be a non-member) and Purveyor of the Year.    Chef Garza reminded everyone that all nominations may continue thru this month and before the next meeting.  Nominations may be forwarded to the TCA office.  At the May 2 meeting nominees would have to provide a talk on what they have contributed to the organizations, why they feel they deserve this prestigious award.  The following nominations were received at the meeting.  Director-Rudy Garza II, Chef of the Year-Valerie Chew, Contributor of the Year-The Radisson and San Antonio Food Bank, Purveyor of the Year-Burton Chase, Texas Meats and Pastry Chef of the Year-Chef Garza indicated he would check to see if this category was being considered this year.  Chef Garza went on to share information on future culinary arts events:  River Oaks Country Club Culinary Symposium, June 6-7, Houston, Texas; Texas Restaurant Association Southwest Food Service Expo, June 27-29, Houston, Texas; Texas Chefs Association Annual Convention, July 16-17, Holiday Inn Hotel, Beaumont, Texas; ACF National Convention, August 2-5, Anaheim, California.  Chef Garza encouraged all to check/get support from their current employers to support these upcoming events.

Call to Order:  Meeting was called to order at 4:35 pm by Chapter Director Chef Rudy Garza II.  Chef Garza thanked all in attendance, announced those excused from today's meeting.  Burton Chase invited all to enjoy refreshments provided by host.

New Business:  Readdressed the need to work on recruitment and to explore initiatives to begin to rebuild for 2010.  Chef Perrington moved to move meeting dates to Monday's versus Tuesday's as a better date to have chefs attend due to most folks are off on Mondays versus Tuesdays.  Mario Perez seconded motion, motion carried.  She additionally shared discussion to connect with HEAT as a joint membership-item open.  Shared his talk with state office to gather additional information before proceeding with city-wide Chef's Competition.  Discussion ensued with Chef Perrington, Chef Garza and Chef Mario.  Chef Perrington discussed ACF list of products for competition and would work on securing ACF list asap.  It was discussed that the pantry would be stocked ala ACF style/standards.  Christina would contact the various POCs for product donations, press release opportunities with NPR and secure TCA medals.  It was discussed and agreed upon with membership that the fee would be $100.  Chef Mario stated that the San Antonio Food Bank kitchen facility was prepared to host the fundraising event.  Chef Garza spoke on upcoming culinary functions:  Tamalada, CIA Paella Cook-Off scheduled for March 14 at Pearl Brewery.  Chef Perrington spoke on the TARA Competition with the Professional Chef's Association in Houston, Texas.  Preliminary information reflected that the event would be held at River Oaks, $250 entry fee, 1 day event. 

Open Forum:  Chef Pinkston spoke about the AT&T Center Food Services, his role, his mission to provide services to patrons and closed with a tour of facilities which was very informative.  Chef Perez shared "greetings" from Chef Mark Schneider, TCA Chapter Vice President whom asked for everyone's support of the Skills USA Competition March 5, taking place at San Antonio Food Bank.  Judges were needed for SKILLS USA Competitions on March 5.  Haven for Hope launch is March 22, 2010.  Booz-Allen-Hamilton Cheesecake Competition-needing judges to assist on Friday, March 12 at San Antonio Food Bank.
